Balsamic Honey Chicken over Spinach

Ingredients
- 1 lb chicken breast
- 16 oz Spinach, fresh
- 1/2 teaspoon salt and pepper, each
- 1/4 teaspoon Oregano, dried
- 1/4 teaspoon Basil, dried
- 2 tablespoon Honey
- 1/4 cup Stevia
- 1/4 cup Sugar
- olive oil
Instructions
- Put olive oil in skillet on medium heat.
- Season the chicken with oregano, basil, salt and pepper on both sides and place in skillet.
- Cook on one side for 7 minutes and flip and cook the other side for 7 minutes.
- While chicken is cooking, cook the balsamic glaze. In a small sauce pan, put in balsamic vinegar, honey, sugar, stevia and cook till boiling. Then lower to medium low heat for additional 10 minutes.
- Once chicken is done, remove from skillet and set aside.
- Place spinach in the skillet and cook for 5 minutes.
- Serve chicken over bed of spinach and pour the balsamic glaze on top.
