Slow Cooker Pork Cilantro Carnitas Tacos!

No problem…wrap them up individually and use during the week to pack those lunches or for a meal on the go. Pork Cilantro Carnitas with Avocado
Ingredients
- 2 lbs pork
- 2 cups vegetable stock
- 1 orange
- 1/2 tablespoon garlic
- 1 small can green chilis
- 1 tablespoon chipotle seasoning
- salt & ground pepper to taste
- 1/2 tablespoon paprika
- 1 Red peppers, slice
- Corn tortillas
- 1 avocado, sliced
- cheese, optional
Instructions
- Combine seasoning and rub onto pork.
- Place pork into crock pot.
- Cut orange in half and squeeze juice onto pork.
- Cover green chilies on top of pork. Pour stock into crockpot.
- Cook in crockpot for 6 - 8 hours until meat is fork tender.
- Put meat into a corn or gluten free tortilla, top with cheese (optional) and avocados.
- Serve!
I always turn to my tried and true kitchen appliance, slow cooker, when I am feeling a bit lazy or in most cases am lacking time! There is only so much we can fit into one day, right? Slap pork into the slow cooker the night before and its all ready in the morning to prepare a protein packed lunch. On the weekends, I may start in the morning and dinner is done just in time.
