In the late fall when the air is starting to get a little crisp, I start to crave pumpkin. Nothing says fall time like pumpkin and spice. 🙂 Pumpkin is a great way to pack in dietary fiber, which can help you feel fuller longer while only consuming minimal calories. This super food also supports vision health, lowers blood pressure and help you sleep better at night! And while you are at it, why not add in extra protein with a scoop of protein powder. I am always trying to add in more protein to my day to support muscle growth. Pumpkin, protein and gluten-free all wrapped up to be a yummy pancake.  I am in!
Gluten-Free Pumpkin Almond Protein Pancakes

- 1/4 cup almond flour
- 1/4 cup ground flax seeds
- 2 scoops vanilla protein powder
- 1 tsp baking soda
- 2 tsp vanilla extract
- 1/4 tsp salt
- Coconut oil
